What tallow actually does in a pan

The technical case is real and has three parts:

  1. Smoke point. Rendered beef fat holds around 200–205 °C (about 400 °F), comfortably above most refined vegetable oils' usable frying range and far above olive oil's. It is a genuinely better fat for high-heat searing and deep frying.
  2. Flavor. Saturated fat carries and holds flavor compounds. This is why beef-tallow fries taste different, not just crispier.

  3. Melt over low heat, or in a 120 °C (250 °F) oven, for 2 to 4 hours. Low and slow is non-negotiable; high heat produces a strong, gamey flavor.
  4. Strain through cheesecloth into clean jars.
  5. Store refrigerated for up to a year, or at room temperature for several months if fully strained.
